A few months ago, I was told i’m like a toothache that won’t go away.  Just yesterday i was told that i’m like a helmet. Don’t ride your bike without your helmet Elmo says.  I really enjoyed John Mayer’s cover of Tom Petty’s “Free Falling”.  I’ve always enjoyed the song since i’ve been playing a bit of it for nearly twenty years (Full Moon Fever released in 1989.  Despite her hatred of John Mayer, Onelia proclaimed “I’d love you even more if you could play guitar like that!”  I guess I need to take guitar lessons.  First i’ll need to buy some new strings…

Back in 2004, we visited Boracay in the Philippines.  Enjoyed the sun, Hated the jellyfish. Oh the jellyfish.  If only the guys on the boat would of shared their spiced vinegar with us.  days of burning and itching. steroids were needed for the recovery.  oh well.  During our stay, we would buy fresh seafood from the market and the resort’s kitchen staff would prepare them for lunch and dinner.  They did a shrimp dish that was great. I’m not even a big seafood fan.  But that spicy shrimp dish has become one of my favorites.  Here’s a variation of the dish that works pretty well.

12 Large Shrimp with shell on.
1 medium diced onions
1 tablespoon siced ginger
2 cloves minced garlic
1 tablespoon chili sauce
1 fresh whole cayenne pepper
1 tablespoon oyster sauce
2 tablespoon tomato sauce
salt, black pepper, msg to taste

saute onions, garlic, ginger, cayenne pepper in tablespoon of oil
when soft, add shrimp
when shrimp starts to turn pink:
add tomato sauce
add chili sauce and oyster sauce

serve with rice…
